- Take 1/2 cup of arhar dal. Soak and rinse the dal with water about 3 to 4 times the quantity of the daal. Place the dal in the pressure cooker, add 2-2.5 cups of water, a pinch of turmeric, and pressure cook for 6 whistles.
- While the dal is cooking , soak a tablespoon of tamarind in about a quarter cup of water.
- Take a radish. Wash it and peel it. Slice the clean, peeled radish in round, even slices. Ensure there is about 2 cups of radish. Cut all the other veggies like shallots, tomatoes, etc., and keep them aside.
- Remove the pressure cooker from the flame and let the pressure settle down. Mash the dal with a spoon or ladle.
- Take a non-stick pan and place it on medium flame. Add 2 tablespoons of oil to a hot pan. Add a teaspoon of mustard seeds and let them splutter in the hot oil.
- Add a quarter teaspoon full of methi seeds and half teaspoon of urad dal. Fry the dal in hot oil until it turns golden. Add 5-6 sliced pearl onions to the hot oil. Sauté until they turn translucent.
- Add 1 or 2 dry red chillies for taste. Add a quarter teaspoon of asafoetida. Sauté the ingredients for a few seconds on low flame. Chop 1 medium-sized tomato and add it to the pan. Add some curry leaves along with it for flavour. Sauté the tomatoes until they soften. Now, it is time to add the already sliced radish to the pan.
- Add a quarter teaspoon of turmeric powder and mix well. Sauté for about a minute. Add 1 cup of water to the sambar. Sprinkle salt as per your taste. Cover the pan with a lid and let the radish slices cook on medium flame. Remove the lid periodically and check if the radish slices are tender.
- Once the radish has turned soft, add the mashed dal. Add the tamarind pulp. Also, add two tablespoons of sambar powder. Add sugar or jaggery to taste.
- Simmer the mixture on medium flame until the aroma of raw tamarind is replaced by that of cooked ingredients. If the Mullangi Sambar appears to be thick, add some water. Garnish this mouth-watering sambar with coriander leaves and serve with steaming idlis.
