Ragi Onion Uttapam Recipe (2 Servings):

  • Ragi Dosa Batter, as required
  • Rice flour, 1/2 cup
  • Semolina 1/2 cup
  • 2 onions, finely chopped
  • 2-3 green chilies, finely chopped
  • Coriander leaves, chopped
  • Salt, as per taste

Step-by-Step Instructions:

  • As the first step, you need to prepare the Dosa Batter. For the Dosa Batter Recipe, you need to soak and blend black gram lentils and rice, fermented to be made a batter.
  • At the next step, you need to combine batter with rice flour and keep them aside to ferment for a minimum of two hours.
  • Heat a utensil, preferably a skillet, and sprinkle some water when it is ready.
  • When it is entirely ready, pour a ladle full of batter, and offer a light swirl to spread the batter evenly. Ensure that you do not spread it like dosa, instead, it should look like a thick pancake.
  • Soon after, sprinkle a generous amount of onion, coriander leaves over the Uttapam. While cooking, you can also drizzle some oil around it and keep it covered using a lid. Alternatively, you can also let it cook in the open.
  • Once the top gets slightly steamed with the batter not being as raw as original, make sure you press the filling using a flat spatula. Flip the Uttapam to another side and start cooking the other side.
