Rava Paniyaram Ingredients:

  • 2 cups parboiled rice
  • 1 cup urad (toor) dal
  • 1 tsp fenugreek seeds
  • 1/2 cup cooked rice
  • 2 tsp salt
  • Water as required
  • 2 tsp oil
  • 1-inch grated ginger
  • 1/2 finely chopped onion
  • 1 green chili
  • A pinch of baking soda
  • 2 tbsp finely chopped coriander leaves

 

The Ravi Paniyaram batter is made of parboiled rice, urad dal, and raw rice. While making the dosa idli batter, the proportions of ingredients, consistency of better, and proper fermentation time is needed to be taken care of, to get perfectly made, soft, and fluffy paniyaram. A few seeds of fenugreek can also be added to the dal and rice, as it helps in the fermentation process. The ingredients need to be fermented for around 8-14 hours, depending on the climate of the place.
Once the dosa idli batter is ready, making Paniyaram does not take a lot of time to be prepared. You can improvise a little and add veggies of your choice like peas, capsicum, beans, etc., to the batter. It must be served hot.

Step-by-Step Instructions:

  • Prepare the idli dosa batter using urad dal and rice. Soak, grind, and ferment for around 8-14 hours to get a smooth batter.
  • Whisk the fermented batter well to remove any lumps.
  • Add water as required to make a smooth batter. Keep aside.
  • Take a wok and heat 2 tea-spoon oil. Add green chili, ginger, and onion. Sauté for a couple of minutes.
  • Add curry leaves and coriander leaves to the wok and mix well.
  • Turn off the gas and add it to the batter.
  • Heat the Paniyaram pan, and brush a few drops of oil on the mold.
  • Pour the batter into the mould and cover it. Allow it to simmer for a minute or so, till the paniyaram gets perfectly cooked.
  • Turn using a spoon, so that it cooks evenly on both sides.
  • Cook until it is golden brown on both sides.
  • Take out the Paniyaram from the mold.
  • Place them on the serving plate, and serve with coconut or tomato chutney.
