- Add 2 tsp of salt to your Idli Dosa Batter and mix well.
- In a separate bowl, add all the vegetables for your toppings. Add in the garlic, ginger, chillies, curry leaves, coriander and mix well. Remember to season with salt and pepper.
- Next, heat a tawa on a medium flame. Once the surface becomes hot, pour a ladle of batter on to the tawa and spread out evenly in circular motions. As this batter is thick, make sure not to spread it out too much.
- Put a generous amount of the vegetable mix on the batter and spread out evenly. Remember to lightly tap the veggies into the uttapam.
- Add a tsp of oil around the edges and cover the tawa with a lid. Allow the uttapam to cook for a few minutes. You will know it’s ready when the edges turn a light brown colour.
- Flip to the other side and let the veggies cook for a minute.
- Finally, serve the hot vegetable uttapam with butter or mint chutney.
